Foodie Me

Foodie Me

I've been cooking many exciting dishes in the past few weeks! This is one of the benefits of living in a big city. We don't have to drive so far to find a particular ingredient. This place has Korean, Chinese, and Japanese grocery stores. The locally-made Kimchi is the best. We also have Costco and Safeway for non-oriental food. Back in Corning, we had no Costco! Of course, convenience comes with a price. Things tend to be more expensive here than in Upstate New York.

The gluten-free dish for my husband
Belgian Mussel Soup
Udon Noodles with Seafood
Beef with French Beans
I also made orange chicken, eggplant tofu, and pumpkin pies. I got more ingredients this week. I will be making fish soup, steak, and much more! I am so excited!

Simple Fish Dinner Recipe for Busy Weekdays

So how to make some simple fish dinner?

The ingredients
  • Fillets -- You can get these at Walmart in the frozen section.
  • Beans -- You can also get these at Walmart in the frozen section.
  • Lemon -- half a lemon for each plate
  • Avacado -- a full-size avocado
  • Salt and black pepper --- for the taste
  • Butter -- adequate amount of butter based on the amount of fish being cooked
  • Olive oil
Directions
  1. Add olive oil to your pan and make sure the oil thinly covers the pan
  2. Put in the frozen fillets (amount of your choice)
  3. Put in some packaged frozen beans
  4. Put the butter in
  5. Put salt and black pepper on each side of your fillets and over the beans
  6. Now wait and let it cook for a few minutes and in the meantime, flip the fillets several times
  7. Wait until the fillets turn to white instead of translucent and you know your dinner is almost done!
  8. When both beans and the fillets are done, take them out and display them on the plate.
  9. Cut a lemon in half and display one-half on the plate (make sure you squeeze the lemon juice out when you are eating your fish)
  10. Cut an avocado to half and peel off its skin and display them on the plate
  11. Enjoy!
Voila! Here is your healthy dinner for your healthy lifestyle even during the busy weekdays!

Healthy and Simple Breakfast

Healthy and Simple Breakfast
How to make simple and healthy breakfast in the early morning?

In my yogurt parfait

- Choose your favorite yogurt (vanilla, peach, strawberry, etc.)
- Choose your own fruits (in my case, I got raspberries and blueberries. Strawberries are also ok.)
- Granola (choose your own brand such as Quaker)

Mix them together. I got my yogurt parfait like the ones I bought from Starbucks and Tim Hortons.

On the said, you can toast some bread or waffles as more solid food.

There! It only took me 5 minutes to get everything ready for the busy mornings.

Also, don't forget that morning coffee! Ready to go to work!

Lobster Dinner

Lobster Dinner
I was craving for Maine lobsters last night, so boyfriend took me a local Wegmans store and got me two lobsters!  Because of our utensil limitation, we had to boil the lobsters instead of steaming them.

TIPS
  • After boiling a 1-3/4 pounds lobster for 15 minutes, the shell becomes crispy and is easy to break. There seems to be a three-way relationship: size of the lobster -> length of boiling -> crispiness of the lobster.  Click here to see the boiling instructions for different sizes of lobsters.
  • To make the lobsters more delicious, we made two types of dipping sauce. Squeeze that lemon juice from a fresh lemon. Microwave unsalted butter for 30 seconds. Voila.

Our kittens got very excited and curious with the lobsters. They were checking them out in the sink! How adorable! I hope you like this piece and enjoy your lobster dinner!
